Roasted veggies and Baked Haddock

You will need:

  1. Drizzle of olive oil
  2. 1 Tsp. Lemon juice
  3. 1 tsp. Parsley
  4. 1 tsp. Dill
  5. 1 tsp. Paprika
  6. 2 cuos Broccoli florets
  7. 2 Carrots sliced thin
  8. 2 cups cauliflower
  9. Salt and Pepper to taste
  10. 1 spaghetti squash
  11. Parmesian cheese

Preheat oven to 400°

Cut squash in half and remove seeds. Place cut side down on a baking sheet and until form tender. Take out and cool.

Use a fork to scrape “noodles” out of shell.

Arrange filets and veggie’s on an oiled baking sheet. Drizzle with oil season with all herbs and spices. Bake until flakey.

Bed fish on noodles and top with veggies and cheese!
