If Your following the Keto Diet, there are many low carb meals that are delicious. This is one of them!
What you will need:
- 4 or 5 chicken breasts.
- 2 large carrots.
- 2 lbs of zuchinni noodles.
- 1 diced red pepper.
- 2 large Portobello mushrooms.
- 3 cups of broccoli florettes.
- Salt and Pepper to taste.
- Pinch of ginger
- 2 tsp. Minced garlic.
- 6 tbs. Soy Sauce.
- 1 Cup of chicken broth
Slice chicken into thin strips and throw into an oiled skillet until cooked. Season with salt and pepper. Add a pinch of ginger. Add 2 tsp. Minced garlic. Stir in 3 tbs. Of Soy sauce. Once cooked, remove from pan.
Add oil to skillet and a splash of water. Add sliced carrots, and mushrooms. Cook til tender. If your broccolli is fresh add now. Otherwise add later. Once tender cover with noodles and pepper. Add chicken broth. Cover and let steam on medium low heat. Season with same seasonings used to do meat. You can also add red pepper flake if you want to spice it up. I did!
Once tender toss in chicken and let come together. Serve!
Fed my family of 6 with plenty of leftovers.
